Venere rice with zucchini and prawns

A first course of this particular type of rice, born in Italy from the crossing of a variety of Asian black rice and a variant of rice from the Po Valley. With its slightly fruity flavor due to the prawns cooked in lemon, tabasco and zucchini, this dish perfectly pairs with a harmonious and fresh Rocca dei Forti wine.
Preparation
  1. Start by taking a large pot and filling it with a good amount of water and salt to cook the rice.
  2. While waiting for it to cook, wash the zucchini and finely cube.
  3. In a medium sized pan, brown the garlic with the oil, add zucchini, salt and pepper, cook for 5 minutes.
  4. When the zucchini is cooked, remove garlic and set aside to cool.
  5. Clean the shellfish and place in a bowl, drizzle with oil, a few drops of tabasco, lemon zest salt and pepper.
  6. Transfer the prawns into a wide heated pan and toss well, simmer with lemon juice and cook until they take on some color.
  7. Once the rice is ready pour it into a large bowl, add zucchini and prawns and mix well before serving.
